Goat Cheese and Tomato Triangles


Puff pastry is incredibly transformative, and although not the healthiest of snacks, it’s easy to utilize with essentially whatever you have left over in the refrigerator. Goat cheese, tomatoes, and thyme add the perfect blend of tart and salty flavors to the puff pastry, which would also lend well to brie and other soft cheeses.





1 sheet of ready to use puff pastry
1 ripe juicy tomato
100 g goat cheese (I used Sainte Maure)
fresh thyme
extra virgin olive oil
salt & pepper to taste


1. Heat oven to 425º F. Line a baking tray with parchment paper. Cut puff pastry into approximately 10 x 10 cm squares and divide each into two triangles. Cut tomato into thin slices. Roughly chop goat cheese.
2. Place pastry on baking tray, top with a few slices of tomato, and a tablespoon of goat cheese. Season with salt and pepper. Drizzle olive oil over the cheese and tomato, decorate with fresh thyme.
3. Bake for about 10 minutes or until the pastry is nicely puffed and golden.
